4lb - 8lb Smoked Gammon 3 x 75 cl bottles of Cinnaghtaun Apple Juice 3 large sticks of Cinnamon 5 whole Cloves 2 tbsp Honey 2 tbsp Mustard 2 tbsp Brown Sugar 250ml Cinnaghtaun Apple Juice
Soak the gammon for 24 hours in enough water to cover. Drain off the water, place the gammon in a large saucepan and cover with Crinnaghtaun Apple Juice. Add cinnamon and cloves. Bring to the boil and cook for 20 mins. Take off the heat, leave the Ham to cool in the juices until nearly cold. Drain away the juices. Place the ham in a roasting pan, spread the honey, mustard and sugar which you have mixed all together over the ham and pour the Crinnaghtaun Apple Juice into the roasting pan. Put into a hot oven for 15 - 20 mins. |
